Crunchy and colorful, this cabbage slaw compliments most meals and gets better the longer it sits. Enjoy it throughout the week and easily add vegetables to every meal. The tangy vinegar and lime juice bring out the flavors in other foods in your meal as well!
Ingredients:
1 purple or regular cabbage, or half of each
3 sprigs green onions finely chopped
2 cloves garlic minced
2″ knob garlic minced or grated
4 lemons
1 cup apple cider vinegar
3 Tablespoons olive oil
1/4 cup soy sauce
2 teaspoons sesame oil
2 Tablespoons sesame seeds
Instructions:
1. coarsely chop cabbage or process with slicing attachment on food processor
2. zest 2 lemons
3. squeeze out juice of all lemons
4. place all ingredients other than cabbage in a pour-able cup*
5. pour contents onto cabbage and stir
6. enjoy it immediately and/or let it sit. The longer it sits the more flavor is infused and the softer the cabbage becomes
*For a quick measuring method use a pour-able measuring cup and measure the ingredients as you put them in. 1 cup apple cider vinegar + 1/4 cup soy sauce (makes 1 1/4 total contents). No need to get multiple measuring cups dirty!
