4 Ingredient Potato Salad

For: carb-loading, nutrient-dense carb-rich foods, potlucks, pre-game team dinners

“The easiest carbs you’ll ever eat.”

This is my go-to dish for team dinners, training camps, and team potlucks. Super easy, packed with nutrients, and full of glycogen-building+replenishing carbs. Years back I created the menu and did the majority of the food prep and cooking for a professional team of ~20 cyclists and this was one of the athlete favorites. They loved how simple it was and the mustard and green onions gave it a flavor pop. The majority of the nutrients (vitamins and minerals) in potatoes come from their skins, so I recommend keeping the skins on! Next time you are invited to a team dinner, are making a dish for your kid’s sports team, or are at a training camp consider this super easy potato salad!

Ingredients:

  • 3 large potatoes, scrubbed
  • 1-2 spring onions, thinly sliced
  • 2 Tbsp stone ground mustard
  • salt and pepper


Instructions:

  1. Chop potatoes into 1″ pieces. Leave the skins on for extra nutrients!
  2. Bring a large pot of lightly salted water to boil and add potatoes. Boil until they are reasonably soft, using a knife to test.
  3. Drain potatoes and add to a large bowl.
  4. Add all other ingredients to the bowl, gently mix with a large spoon, and season with salt and pepper to taste.

Easy Meal Idea: potato salad, 2 handfuls greens, 1 can fish
