Sheet Pan Salmon Dinner

Quick, easy, omega-3s, balanced meal, fast cleanup, what more do you need in a weeknight recipe?!

Ingredients

  • 4 salmon fillets
  • 1 pound asparagus, trimmed
  • 2 pounds sweet potatoes, quartered
  • 3 tablespoons olive oil
  • salt and pepper to taste
  • 3 teaspoons Italian herb seasoning
  • 1 teaspoon garlic powder
  • 2 tablespoons butter, melted
  • 2 tablespoons honey
  • 1 teaspoon dijon mustard

Instructions

  1. Preheat the oven to 400 degrees. Toss sweet potatoes with 2 tablespoons olive oil, salt and pepper to taste, garlic powder, and 2 teaspoons of Italian seasoning. Arrange on a large sheet pan and bake for 10 minutes. 
  2. Arrange salmon fillets and asparagus on the sheet pan. Whisk together melted butter, honey, dijon mustard, and 1 teaspoon of Italian seasoning. Brush onto salmon fillets.
  3. Drizzle asparagus with remaining 1 tablespoon olive oil, season with salt and pepper to taste.
  4. Bake for 15 minutes until asparagus and potatoes are fork-tender and salmon is cooked through. 

Notes: Add extra sweet potatoes or other carb-rich foods on the side to get extra carbs (rice, bread, russet potatoes). Consider adding a side of greens for extra veggies.
