I came up with this recipe when I was cleaning out our fridge and pantry before moving to Fort Collins Colorado. It’s a great ‘clean out’ meal and something you can throw together with ingredients you likely have on hand at any time.
Ingredients:
1 can black beans, drained and rinsed
1 can chickpeas, drained and rinsed
1 can mixed beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 small can green chilles
2 red bell peppers chopped and sauteed for 3minutes
1 giant red onion chopped and sauteed for 3minutes
1 bag frozen corn, reheated in microwave
1 bag edamame, reheated in microwave
2 jars pickles, chopped
1/2 bunch parsley finely chopped
seasoning salt to taste (mixture of herbs, dried garlic, dried onion, and salt)
red wine vinegar to taste
Instructions:
1. mix everything together
2. eat immediately or leave in fridge to eat for up to 5 days
